  • 6 oz wild-caught salmon fillet
  • 1/2 cup brown rice (dry; about 1 cup cooked)
  • 1 cup broccoli florets
  • 1 cup baby carrots
  • 1 tbsp extra-virgin olive oil
  • 1 lemon (half juiced, half sliced)
  • 1 clove garlic, minced
  • 1/2 tsp dried dill
  • Sea salt and cracked pepper

Instructions

  1. 1Cook brown rice according to package directions (about 30-40 minutes).
  2. 2Preheat oven to 400F. Place salmon on a parchment-lined sheet pan.
  3. 3Drizzle salmon with olive oil; top with garlic, dill, salt, pepper, and lemon slices.
  4. 4Bake 10-12 minutes until salmon flakes easily with a fork.
  5. 5While salmon roasts, steam broccoli and carrots for 5-6 minutes until tender-crisp.
  6. 6Plate the rice, top with vegetables and salmon, finish with fresh lemon juice.
