- 1/2 cup brown rice (dry; about 1 cup cooked)
- 1 cup broccoli florets
- 1 cup baby carrots
- 1 tbsp extra-virgin olive oil
- 1 lemon (half juiced, half sliced)
- 1 clove garlic, minced
- 1/2 tsp dried dill
- Sea salt and cracked pepper

- 1Cook brown rice according to package directions (about 30-40 minutes).
- 2Preheat oven to 400F. Place salmon on a parchment-lined sheet pan.
- 3Drizzle salmon with olive oil; top with garlic, dill, salt, pepper, and lemon slices.
- 4Bake 10-12 minutes until salmon flakes easily with a fork.
- 5While salmon roasts, steam broccoli and carrots for 5-6 minutes until tender-crisp.
- 6Plate the rice, top with vegetables and salmon, finish with fresh lemon juice.
